Hello, hello friends!
It’s hard to believe that we are halfway through September. Despite this year being quite different, surprisingly it’s flown by.
Speaking of flying by, these past few weeks have been super busy. The little guy started remote learning and it’s taking up a lot more time than I anticipated. It’s been a lot of work and major change to my schedule. I am not going to lie, some days I get overwhelmed with it all. I keep telling myself that we will find a rhythm…eventually. So, in the meantime, I am just trying to go with the flow and take it one day a time.
On a different note, I have found books again! With our local library closed for some time due to the pandemic, I honestly haven’t been reading as much as I would like. Untamed by Glennon Doyle finally came in for me at the library after a few months wait. I am only a chapter in but enjoying it so far.
Aside from that, I have been obsessed with all things Halloween! I have been scoping out the internet for some décor and found a lot of great items. I snagged these clear eye ball string lights for our backyard as well as these foam tombstones. Additionally, I promised the little man lots of treats including making a no churn ice cream and cake pops!
While on the subject of treats, let’s chat snacks!
If you follow me on Instagram, then you’ve probably noticed that I am a huge fan of food, snacking in general. For as long as I can remember, I have always been the type to eat on and off throughout the day. I just can’t eat 3 meals a day and usually need something in between to hold me over. I practically live in our kitchen! You can find me standing in front of the fridge or pantry trying to find something to crunch and munch on. Simply put, I am what you call a serial snacker!
While there’s nothing wrong with treating yourself to something sweet or crunchy in between meals, I also know that mindless eating can be bad for you. Snacks are often synonymous with highly processed foods rich in high fructose corn syrup, artificial ingredients, and trans fat. Eating too much of any these will lead to lots of empty calories. In fact, with snacks lurking around every corner, feeding yourself and your family nutritious snacks can be hard.
Nonetheless, it is possible!
Over the years, I have learned that healthy snacking requires some planning. In this case, if you really want to eat something that will fill you up and keep the hunger pains at bay, then homemade is the way to go. One snack that has become my go-to year after year are peanut butter protein balls. I discovered these yummy bites 10 years ago while skimming through a fitness magazine.
With a delicious blend of peanut butter, nuts and protein powder, it’s a great way to satisfy hunger and help you stay energized. It is seriously an effortless snack that’s heart healthy, nutrient rich and scrumptious! Not to mention they are super simple to make and include minimal ingredients (just five). In addition, they are customizable so that you can literally add in whatever you’d like. For example, not a fan of oats? Protein powder will work. Don’t like peanut butter? Almond butter is a great alternative!
That said, in honor of it essentially being (almost) Autumn, I thought it might be fun to whip up a fall version. That’s right? I am talking pumpkin spice! I used this recipe from Pinch of Yum but tweaked it to our liking and used what we had on hand. The results? Two thumbs up! If you are a big fan of pumpkin and all things pumpkin spice like me, you need to give these Pumpkin Spice Peanut Butter Snack Bites a try.

They look yummy, what fun picks! My kids love little snack balls like this – ever since I called them chocolate brownies when they were kids because the dates make them brown 😉 My 6 year old said to me the other day “you know these don’t even taste like chocolate….” haha. I asked if wanted me to eat it instead and he said he still wanted to eat it, so that’s a win!

I’m just like you with snacking. I’ve stayed away from peanut butter b/c of digestion issues. I’m wondering if a different nut would be better. I’d certainly like to try these. Take care adjusting to your new schedule. I know on time flying by–what? Christmas will be on our heels.

ok Maureen, that sounds soooo yummy! I love peanut butter and love pumpkin anything, so I need to try and make these! My mom used to make chocolate peanut butter buckeyes at Christmas that were tasty, these are perfect for the season. Ive gotten a few recipies from there too.

I am always looking for healthier snacks, these sound so good!! And, I feel your pain on the virtual school. Both of my kids are in person school, but my daughter got exposed at dance… and, she is home doing virtual for two weeks and yes, it is taking a lot of my time to help her and I’m def. taking it one day at a time!!!

I love peanut butter bites too, especially pre-run in the middle of the day. The kids love it too and as an school safe alternative I use WOW Butter because it’s peanut free.
Being a home schooling mama can’t be easy. Our division is offering online learning so that parents of young ones are still having to help out but they don’t have to plan the curriculum. All that is okay but it means small children are in front of the screen a lot. Its a tough time and all we can ask of each other is our best, and I am sure you are doing that because you are you. Give yourself and him grace.
