First off, let me start by saying that I am no cook. I am not very creative in the kitchen and that’s why I like easy recipes.
One of those straightforward meals that my family love so much is a homemade pizza and hands down, our favorite is pepperoni. Not only is it delicious but it is perfect for days when you crave a simple meal that satisfies. Of course, apart from the taste, what I truly love about making pizza is the ease of preparation. It literally takes next to no prep work and is ready to eat in less than 20 minutes. All you need is pita bread, tomato sauce, mozzarella cheese, pepperoni and olive oil. But you don’t have to limit yourself to that. The beauty of a homemade pizza is that there are no rules when it comes to toppings. If you love your pizza with pineapples or even jalapenos, feel free to add them.
While you can make your own pizza crust, I used store-bought pita bread. They are very inexpensive and a great alternative for making your own. But, if you are up to it, my husband follows this recipe to make fresh pizza crust.
In terms of sauce, I used regular pasta sauce. I had leftovers from a previous spaghetti dish so that got used up in this.
With regards to the cheese, I bought fresh mozzarella from Costco. Though, this isn’t as gooey as it’s shredded counterpart, it is very soft and creamy. It is also a wonderful option if you prefer your cheese to be healthier and lighter.
For the pepperoni, I used Boars Head pepperoni slices. It literally gives our pizza a spicy kick making it even more scrumptious!
Lastly, you need olive oil. This helps lock in the flavor and provides moisture so that it does not dry out your pizza. I used Le Stagioni D’Italia extra virgin olive oil (EVOO).
Speaking of, if you are not familiar with EVOO, it is an extra virgin olive oil produced made by pressing European olives without heat or chemicals. As a result, it is nearly free of acidity and it retains more true olive taste imparting a delicious blend that has a well-balanced of fruitiness, bitterness and spiciness. What’s more, unlike refined olive oils, EVOO contains more of the natural vitamins and minerals found in olives. Because of this, extra virgin olive oil is not only tasty but beneficial for your health too!

Once you have all your ingredients ready, preparing the pizza is straightforward.
First, preheat your grill to 375-400 degrees.
Then, brush a generous layer of olive oil to one side of your pita bread.
Next, place it on the grill until you see the grill marks which shouldn’t be no more than 60 seconds.
After that, quickly top with pasta sauce and spread it evenly. (We tend to go light on the sauce, so our layer is usually pretty thin).
Finish off with slices of mozzarella cheese and pepperoni. (My family loves crispy pepperoni so I microwaved our slices for 30 seconds prior to grilling).
Lastly, place it back on the grill and cook for 4-5 minutes or until the cheese melts. Let it cool for a few minutes. Slice and serve.
(*Side note: Every grill is different and will cook differently. That said, two of the three pizzas that I made had overcooked the bottom of the pita. My husband suggested using a foil layer for the third pizza and that worked beautifully).

We have pizza at least once a week, and will definitely be adding your grilled pepperoni pizza to our menu, it sounds delicious! I especially liked your tip about microwaving the pepperoni first, it not only makes it crisper, it takes some of the grease away so there won’t be as much pepperoni grease on the pizza. You’ve inspired me!!!! I am adding this to our summer at the cabin menu!!! So easy and when we have company people can add what they want and remove what they don’t want. I’ve never used pita bread but that sounds delicious and I will be sure to start by brushing on some Olive Oil. I know there are many different flavors but I never know what I am looking for, so the only thing I have in my kitchen is the standard one from the grocery store, but maybe I’ll check out the local Olive Oil store and just try something different for this recipe.
